cold-processed hops deliver a big tropical aromatic punch – tangerine, mango, passionfruit, lychee. A small gift of Munich malt and rolled oats help build malt structure and luscious mouthfeel.

Alcoholic Ginger Beer with Spiced Virgin Cane Spirit Billson’s very own spiced virgin cane spirit is flavoured in oak with fresh orange, vanilla and cinnamon and has been added to our famous Alcoholic Ginger Beer. This mouthwatering collision might just be the perfect storm.

Kettle Soured Hazy Style IPA containing lactose. Double dry hopped with Galaxy & Citra resulting in a refreshing, juicy sour.
Elation Barrel Aged Sour 5.0%
Kettle sour, aged in Chardonnay barrel, and lightly dry hopped to produce stone fruit characteristics.
Bringing back the Dunkel, Dark Wheat Beer packed with Banana and Chocolate flavours. Throw into the mix a serving of Whipped Cream and a cherry on top!
Banana Split 4.5%
Chocolate, banana and served with Whip Cream. Bringing back a traditional Dunkel style with a cool fun twist.
Single Hop Simcoe IPA 6.2%
Vienna/ Pils base Wet and Dry Simcoe hopped IPA. Big mouthfeel with plenty of fruit to carry it.
Grapefruit Pale 4.5%
100 Grapefruits have been thrown at this beer, summer pale with a punch of grapefruit tartness dry hopped with Amarillo.
Compass Mango Sour 3.5%
Smashable Dry Hopped Mango. Kettle Sour that is clean and crisp.

This long hot summer is going to need something equally refreshing to help endure it. And we think we’ve got the answer! Combining a delicious thirst quenching Peach Ice Tea and a super juicy NEIPA sounds like a pretty good idea to us.
Cherry Mandering Fruited Sour Ale 5.3%
This beer was kettle soured, before being fermented with a blend of yeast. Looking for a fruit forward fermentation profile, including esters of pear/citrus, tropical fruit, with some light notes of funk, showcasing quality summer fruit of Australia we re-fermented with organic cherries and raspberries. Present some complexity to the discerning drinker, as well as being quaffable!

Double Milk Stout 8.2%
The bigger more intense brother of our core Milk Stout. Rich milk chocolate and vanilla bean aromas. Smooth mouthfeel, velvety cocoa, vanilla and toffee with espresso on finish.
FIXATION BREWING COMPANY
A US East Coast inspired IPA, Dreamseeker is about to make your lupulin dreams come true! Fermented with Vermont yeast, massive hopping rates (w Citra, Mosaic, Amarillo) and a warmer fermentation, combine to deliver aromas of pineapple and lychee in this lupulin monster.

Is our interpretation of an old world farmhouse ale. The unique blend of saccharomyces and Brettanomyces yeast, cultured up in our lab, and the Triticale malt has created a complex beer that is slightly tart with notes of orange citrus and a medium-dry finish.
Series Of Dreams 5.8%
Barrel aged Golden Sour aged on Raspberries This fruited sour beer has been blended from carefully selected 6-9 month old golden sour beer that has been aged in our puncheons (larger barrels). After tasting and blending the beer is transferred into recoopered barriques (smaller barrels) and aged on whole fruit from the Yarra Valley.

Yam Daisy Gin 40%
The Yam Daisy was the main staple food for the Wurundjeri Aboriginals, the local tribe around Melbourne. The gin recipe is unique, drawing inspiration from the botanicals of the Convent and local area of the Yarra.
Harcourt Dry and Aperol Spritz 8.5%
Harcourt Dry Apple Cider over ice with a gulp of Aperol and garnished with Mint and Apple, “A Taste of Happiness”.
Napoleone Cider Sherry Pie 8.0%
Barrel fermented apple cider, fortified with Oloroso Sherry. Off-dry with fine carbonation and notes of spice and oak on the palate.
